Deceivingly simple and perfectly delicious, this pasta is a must try! It’s loaded with all things umami – from mushrooms and miso, to tomatoes and soy sauce… it’s basically the heartiest pot of plants that will absolutely comfort your soul. Happy cooking, lovely friends.

This dish is a perfectly hearty pasta that has just a few simple ingredients. It makes a wonderful family style meal and will please everyone from omnivores and picky kids to hardcore vegans!

 1 cup raw unsalted walnuts (ideally soaked - see step 1 for details)
 1 cup cremini mushrooms
 2 tbsp soy sauce
 3 tbsp olive oil
 2 tsp white miso paste
 25 oz jar marinara sauce
 1 lb pasta of choice, I prefer spaghetti or fettuccini
 *optional toppings: nutritional yeast or cashew parmesan

If you prefer your walnut meat to have a similar texture to ground beef and be nice and soft, soaking your walnuts overnight or in boiling water for 30+ minutes before processing will yield the best results.

Add your walnuts to a food processor or high-power blender and pulse until finely chopped. Transfer to a bowl.

To the same food processor/blender, add your cremini mushrooms and pulse until finely chopped as well. Add to your bowl along with your walnuts.

Add your soy sauce and miso paste to your walnuts and mushrooms and stir until fully combined.

Heat a large skillet over medium high heat, and add your olive oil.

Sauté your walnut meat for a couple of minutes to cook off some of the raw mushroom and begin to brown.

Add your pasta sauce, bring to a simmer, reduce your heat to nice and low and cover.

You only need to cook until your walnuts are softened through - if you pre-soaked your walnuts, this shouldn't take very long at all. If you didn't soak your walnuts, this can take up to 45 minutes depending on how small your walnut pieces are.

*Stir your sauce every 10 minutes or so.

While your sauce is simmering, cook your pasta. Time this accordingly so that your pasta will finish just in time to toss into your sauce!

Toss your pasta with your sauce and serve immediately.

I like to serve by topping with cashew parmesan or nutritional yeast.
