Chickpea Mash Sandwiches

A vegan weekday staple that can be dressed up (or down!) as much as you'd like.

  • 1 can chickpeas (drained & rinsed)
  • salt & pepper to taste
  • 1/4 c. carrot (finely chopped)
  • 1 celery stalk (finely chopped)
  • 3 tbs. red onion (finely chopped)
  • 1/3 c. plant yogurt
  • 2 tsp. mustard

Optional Sammie Toppings

  • sprouts
  • greens
  • sliced tomatoes
  • pickles
  • sauerkraut
  1. Add your chickpeas to a large bowl and season with salt and pepper. Using a fork, generously mash the mixture (stirring as you go) leaving a nice chunky texture once complete.
  2. Add your your mustard, yogurt, celery, onion and carrot. Stir until well mixed and once more, taste for seasoning – adjust as needed.
  3. Store in a covered container in the fridge if you're making ahead!

  4. To make your sandwiches, load onto toasted bread and top with any/every sammie topping you’d like (i.e. pickles, greens, sprouts, tomatoes…)
