Chickpea Mash Sandwiches
A vegan weekday staple that can be dressed up (or down!) as much as you'd like.
- 1 can chickpeas (drained & rinsed)
- salt & pepper to taste
- 1/4 c. carrot (finely chopped)
- 1 celery stalk (finely chopped)
- 3 tbs. red onion (finely chopped)
- 1/3 c. plant yogurt
- 2 tsp. mustard
Optional Sammie Toppings
- sprouts
- greens
- sliced tomatoes
- pickles
- sauerkraut
- Add your chickpeas to a large bowl and season with salt and pepper. Using a fork, generously mash the mixture (stirring as you go) leaving a nice chunky texture once complete.
- Add your your mustard, yogurt, celery, onion and carrot. Stir until well mixed and once more, taste for seasoning – adjust as needed.
Store in a covered container in the fridge if you're making ahead!
- To make your sandwiches, load onto toasted bread and top with any/every sammie topping you’d like (i.e. pickles, greens, sprouts, tomatoes…)
