Perhaps the most quintessential of all easy vegan breakfast staples, The Tofu Scramble is a must-have skill in your plant-based breakfast repertoire!
Drain and crumble your tofu into scramble size pieces.
Chop your veg.
Sauté your veggies in light cooking oil or vegan butter over medium high heat until desired texture & flavor is reached; deglaze with water as needed.
Add your tofu crumbles and spices and stir to combine. Sauté for an additional three minutes or so, stirring often and deglazing with water as needed.
Serve hot (ideally with toast and Miyokos Cultured Vegan Butter!).
