I know, I know… zucchini and oats don’t exactly “go together,” but there’s something special about a delicious breakfast that also lets you sneak a little veg in, am I right? This dish is loaded with goodness, from antioxidant laden matcha and chia, to fiber packed rolled oats. It’s also a make-ahead dish, so it pairs well with a busy morning too!

When it comes to toppings, take your pick – you can go all out with the freshest in-season fruit, or you can just stick with something simple like banana and blueberries. I prefer to have a little crunch with my bowl (to keep things from getting overly mushy), so I always add toasted nuts. I typically top things off with chia seeds for some extra goodness on top as well.

I mean, who needs green eggs and ham when you can have green oats and… I can’t think of a fruit or vegetable that rhymes with ham so I’m just going to leave this here.

For the Zoats
 ½ zucchini, grated (see notes)
 ¾ cup rolled oats
 ½ cup plant milk
 2 tsp matcha powder
 3 tbsp chia seeds
 1 tbsp agave nectar
 ¼ cup shredded coconut, unsweetened
Optional Toppings
 fresh fruit
 roasted nuts
 chia seeds
 shredded coconut

Add all ingredients to a large bowl and stir well.

Cover and allow to soak overnight.

Top with roasted nuts, dried berries, fresh fruit or whatever else you see fit!

When it comes to grating your zucchini, feel free to go as fine or as wide as you like – I prefer a small grate but not super fine (helps add a little something when it comes to texture).
