Most people like to think of hummus as an appetizer, but when done right and served alongside a good amount of veggies, hummus makes an awesome and easy vegan lunch! If you’re aiming for SUPER easy (like, you’re new to this whole vegan thing and you’re just trying to make something work) you can always just buy yourself some pre-made hummus… no judgement here.

If you’re going that route, please just make sure that you check the ingredient list to make sure that A) it’s vegan (you’ll find some hummus includes egg or milk powders) and that B) it isn’t loaded with garbage like hydrogenated oils and preservatives etc…

The whole idea here is to keep things simple, and I find that it doesn’t get any easier than a bowl of hummus, a plate of fresh veggies, and maybe some toasted pita or bread on the side… Here’s the gist:

  • Hummus
    • If homemade, check my recipe and video below for Super Simple 5 Minute Hummus
  • Fresh veggies
    • Whatever is affordable and accessible to you is going to be your best bet! I love bell pepper, carrots, celery and cucumbers, but you do you boo.
  • Pita/Baguette/Crackers
    • This is totally optional, just be sure to put an emphasis on the veggies and let this be the side!

You might’ve seen me mention in the video that some people prefer not to incorporate the olive oil into the blend itself, and instead opt to solely drizzle oil on top. If you’re going this route, replace the olive oil with half the amount of aqua faba and then increase aqua faba based on your consistency preference!

Hummus Ingredients
 15 oz can chickpeas, drained (reserve your aquafaba!)
  cup aquafaba (from your canned chickpeas)
 ¼ cup extra virgin olive oil - or avocado oil
 ½ lemon, juiced
 ¼ cup tahini
 1 cloves garlic - this is optional, only add if you're a fan of garlic hummus!
 1 tsp ground cumin
 ½ tsp salt
Optional Toppings
 za'atar
 sumac
 chili lime salt
 chili oil
 extra virgin olive oil
 fresh herbs (parsley/chives/dill/cilantro...)

Add all of your ingredients to your blender/food processor and blend on high for 30 seconds to 1 minutes.

Taste for seasoning and adjust as needed.

Spoon into a bowl, garnish with your optional toppings, and serve!
