If you're looking for the perfect meal to whip up on a busy weeknight and share with family and friends, look no further! These Jackfruit and Black Bean Tacos come together in about 30 minutes and are an awesome easy vegan meal that everyone can agree on ♥
In a colander, drain and rinse your jackfruit. Using your hands, squeeze out any remaining liquid and shred as you squeeze.
Heat a skillet over medium-high heat and add your cooking oil. Once hot, add your shredded jackfruit and a generous amount of taco seasoning.
Stir to combine and sauté for a couple of minutes, stirring often.
Add just enough liquid to cover your jackfruit, bring to a simmer, and cover.
Allow to simmer for about 20 minutes, stirring every 5 minutes and adding liquid as needed - your jackfruit is finished when it's broken-down and nice and tender and soft (but not mushy).
While your jackfruit simmers, add your black beans (either canned, or homemade), along with enough of their gravy to cover them, to a pot and add a generous amount of taco seasoning (to taste).
Bring to a simmer, cover, and then just keep the heat on low until ready to serve.
If you're serving multiple people, a build-your-own style setting is the way to go! Start with hot tortillas, then add jackfruit, black beans, and finish with your desired toppings.
