Jackfruit
 canned jackfruit in water or brine
 taco seasoning - avoid artificial ingredients/fillers; this should be a simple blend of spices; see notes for link to recipe to make your own
 cooking oil - whatever you traditionally use to sauté
 liquid - ideally broth, but water will work too
Black Beans
 black beans - either canned or homemade
 taco seasoning - avoid artificial ingredients/fillers; this should be a simple blend of spices; see notes for link to recipe to make your own
Ideas for Toppings
 cilantro - chopped
 tomatoes - chopped
 red onion - thinly sliced
 jalapeno - chopped or sliced into thin rounds
 vegan sour cream or plain plant yogurt
 salsa
 hot sauce
Other
 tortillas - I prefer a blend of corn and flour but use what you like!

Jackfruit

In a colander, drain and rinse your jackfruit. Using your hands, squeeze out any remaining liquid and shred as you squeeze.

Heat a skillet over medium-high heat and add your cooking oil. Once hot, add your shredded jackfruit and a generous amount of taco seasoning.

Stir to combine and sauté for a couple of minutes, stirring often.

Add just enough liquid to cover your jackfruit, bring to a simmer, and cover.

Allow to simmer for about 20 minutes, stirring every 5 minutes and adding liquid as needed - your jackfruit is finished when it's broken-down and nice and tender and soft (but not mushy).

Black Beans

While your jackfruit simmers, add your black beans (either canned, or homemade), along with enough of their gravy to cover them, to a pot and add a generous amount of taco seasoning (to taste).

Bring to a simmer, cover, and then just keep the heat on low until ready to serve.

Building Your Tacos

If you're serving multiple people, a build-your-own style setting is the way to go! Start with hot tortillas, then add jackfruit, black beans, and finish with your desired toppings.
