Nothing says Sunday morning like a nice stack of hot homemade pancakes, and come fall, these are the perfect pancakes to finish off the weekend. Since you can whip them up in a blender and pour right from there to the skillet, these guys are easy as can be to make on a perfect lazy day. They're vegan (of course) but also gluten free - happy sunday, hungry people.

Dry Ingredients
 1 ½ cups oats
 1 cup almond meal
 2 tbsp flax seed
 1 tsp baking soda
 1 tbsp pumpkin spice
 ¼ tsp salt
Wet Ingredients
 2.50 cups plant milk
 3 tbsp maple syrup
 1 tbsp maple (or vanilla) extract
 1 tbsp avocado oil
 15 oz can pumpkin (1 can) or use fresh!

Add all dry ingredients to a high-powered blender and blend until an oat flour mixture has formed.

Add your remaining wet ingredients and purée until smooth - allow to rest for 5 minutes.

This batter is pretty thick - feel free to add more plant milk if you feel like it's too thick for your taste but keep in mind that these pancakes are very hearty compared to your traditional buttermilk pancakes.

Cook in a skillet greased with oil or vegan butter over low-medium heat.
