Blistered Shishito Peppers in a cast iron skillet with flaky sea salt

Not all shishito peppers are created equal… Eating shishitos is like playing a game of Russian Roulette with heat. About 1 of out every 10 packs a little punch, but nothing that won’t keep you from coming back to grab more. Charred Shishitos with flaky sea salt is one of the easiest, most beautiful, flavorfully complex dishes you’ll ever make. Once you make them once, you’ll be hooked.

Ingredients

  • 6 oz. Shishito Peppers
  • 2 tbs. Sunflower Oil
  • Flaky sea salt (I adore Maldon, but use what you have on-hand and prefer!)

Instructions

  1. Heat oil over medium-high heat in a large skillet.
  2. Add peppers and toss frequently to evenly blister on all sides (this should take about 5 minutes or so).
  3. Transfer to a serving dish and season generously with flaky sea salt.
