This simple 9 ingredient dinner is a busy weeknight lifesaver! It takes virtually minutes to prepare and is packed with flavor and personality. These crunchy bites make an awesome alternative to the traditional Taco Tuesday – they’re affordable, versatile and best of all they’re simple to whip up in a pinch! Whether you’re looking to jazz up Meatless Monday, are bored with your Taco Tuesday routine, or you just find yourself short on time, these Black Bean Soyrizo Tostadas are an awesome go-to recipe.
This is a weeknight lifesaver! Limited ingredients with lots of personality - these will be a new go-to favorite for sure.
Preheat your oven to 180°F. Once preheated, transfer your refried beans to an oven-proof dish and bring to a nice heat in the oven for ~10 minutes. If you prefer to microwave, you can also transfer to a covered microwave-safe bowl and heat for 2 minutes, stopping at the 1 minute point to stir.
Prep your veggies by slicing your tomatoes & onion, de-stemming your cilantro, and either slicing or mashing your avocado.
Remove your soyrizo from it's casing and put it straight into a heated frying pan (I don't add oil, because it's fatty enough of its own). Sauté your soyrizo over medium high-heat until sizzling and heated through.
Layer your tostadas by starting with a nice bed of beans, then topping with soyrizo, avocado, yogurt, tomatoes, onions and cilantro. Sprinkle generously with chili lime salt and serve warm!
