North African Carrot Salad

For some reason, carrots just never get to be the star of the show – but this dish proves that this hearty root vegetable is more than worthy of their moment in the spotlight. Ideally, you’ll prepare this salad as a make-ahead, at least 30 minutes and ideally about 2 hours in advance. But don’t let the preparation time fool you, Moroccan Carrot Salad is a quick fix when it comes to hands-on time, and the hours spent marinating in is worth every delicious bite in the end!

Moroccan Carrot Salad

Ideally, you’ll prepare this salad as a make-ahead, at least 30 minutes and ideally about 2 hours in advance. But don’t let the preparation time fool you, Moroccan Carrot Salad is a quick fix when it comes to hands-on time, and the hours spent marinating in is worth every delicious bite in the end!

Ingredients

  • 1/2 lb carrots, peeled and sliced into 1/2″ rounds
  • 1 clove garlic
  • 1/2 lemon, juiced & zested
  • 2 Tbsp extra virgin olive oil
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • 1/4 tsp chili powder
  • pinch of salt
  • 1/2 bunch fresh mint, chopped

Instructions

  1. Steam your carrots until fork tender, but not mushy. Careful not to over-steam, as with everything, consistency is key!
  2. Meanwhile, combine all of your remaining ingredients (except mint) into a food processor and pulse until smooth.
  3. Pour dressing over steamed carrots and place in the refrigerator for at least 4 hours, or overnight.
  4. Toss dressed carrots with fresh mint and serve at room temperature.
