This Easy Vegan Overnight Oats recipe is the perfect make-ahead breakfast for busy mornings! There are a million different ways you could riff on this dish, so once you learn how to make the base, you're all set to start making the dish your own ♥

Base
 1 part rolled oats (for steel cut directions, see the "Steel Cut Oats Substitution" directions below)
 1 part plant milk
 1 tbsp chia per 1/2 cup of rolled oats
Add-Ins
 dried fruit (raisins, apricots, dates...)
 spices (cinnamon, pumpkin spice, nutmeg...)
 sweeteners (maple syrup, brown sugar, agave...)
 salt
 ground flax seed
Toppings
 fresh fruit (bananas, berries...)
 nut butter (almond butter, peanut butter....)
 nuts (pecans, slivered almonds...)
 compote (raspberry, blueberry, apricot, any compote!)
 chia seeds or hemp hearts
The Night Before

Stir together your oats, plant milk and chia seeds in a bowl. Cover and refrigerate.

The Morning Of

Steel Cut Oats Substitution

Steel cut oats are slightly more complicated, so for make ahead directions (including measurements) please see below:
INGREDIENTS
• 1/2 c. steel cut oats
• 1.5 c. water
• 1 pinch salt
METHOD
1. In a medium sauce pan heated at medium-high heat, add your oats and toast, stirring very often, until beginning to color and smell fragrant (about 2-3 minutes).
2. Add your water and salt, increase your heat to high, and bring to a boil.
3. Once your pot is boiling, remove from heat, cover with a lid, and let rest in pan overnight!
4. In the morning, follow the same directions you would for your rolled oats.
