These naturally gluten-free and vegan sweet treats are a perfect way to celebrate citrus season! Please note that the Prep/Cook time DOES NOT INCLUDE the drying time. See the Rack Drying Method vs. Oven Drying Method instructions below and account for this when factoring in how much time you'll need.

Dark Chocolate Covered Candied Oranges

 3 navel oranges
 4 cups water
 2 cups sugar
 1.50 cups vegan dark chocolate, chopped (or you can use vegan dark chocolate chips)

Slice the ends off of your oranges and then slice into 1/4" rounds.

In a large pot, bring your water to a boil.

Add your sugar, stir to dissolve, and bring to a simmer.

Add your oranges and stir to ensure that all pieces are fully submerged. Bring to a simmer.

Allow the oranges to simmer for about 20 minutes, checking every-so-often to ensure all pieces are still submerged.

After 20 minutes, flip the orange slices and allow to simmer for another 20 minutes (or until the rind begins to look translucent - this can take anywhere from 40 minutes to an hour total).

Carefully remove from the simmer and allow to dry You have two options:
1. Rack Dry Method - will yield a more soft/gelatinous slice
2. Oven Dry Method - will yield a more chewy/solidified slice.

Rack Dry Method: Arrange slices on a rack and allow to dry overnight (at least 12 hours). The humidity in your environment will effect the time needed to dry.

Oven Dry Method: Preheat your oven to 180°F. Arrange slices on a cookie sheet and bake for about 10 minutes on each side. Check after the first 20 minutes and continue to bake as needed for your desired consistency.

When slices are fully dried, melt your chocolate over a bain-marie.

Dip slices halfway into the chocolate and place on a parchment lined baking sheet.

Cool in the fridge for 20 minutes to solidify before serving.
