Nothing says the holidays quite like a Gingerbread Cookie, am I right? These extra spicy little devils just so happen to be vegan and gluten-free as well and they’re a perfect treat for the neighbors and loved ones. Fingers crossed you actually own a rolling pin and are halfway decent at piping frosting unlike me… High Quality Organics Express was kind enough to share some lovely spices with me, so I wanted to do them justice by making a little something that helped them shine – these cookies are just the thing! If you're looking for something spicy that will get you and your loved ones in the mood for the holidays, you've found the recipe! Both vegan and gluten-free, these little scrumptious bites are also fit for the kinder eaters of the world. These are best when enjoyed with a warm coffee or cocoa and preferably with the people you love.

Yields1 Serving

Cookie Ingredients
 ¼ cup vegan butter
 ½ cup brown sugar
 1 tsp baking soda
 ¼ tsp salt
 2 tsp ground ginger
 2 tsp ground cinnamon
 ¼ tsp allspice
 ¼ tsp ground cloves
  cup molasses
 1 flax egg (1 tbs ground flaxseed + 3 tbs warm water mixed & allowed to gel for ~5 min)
 ½ tsp vanilla extract
 2 cups gluten free all purpose flour (sub regular all purpose flour if you don't have gluten intolerances)
Icing Ingredients
 1 cup confectioners sugar
 1 tbsp plant milk
 1 tsp vanilla

Preheat your oven to 350°F

Cream your butter, sugar, salt, baking soda & spices in a large stand mixer for about 1 minute on high.

Add your wet ingredients and mix once more until well combined.

Add your flour and mix just until your dough comes together.

Flour a large surface and roll out your dough to 1/4" thick.

Using a cookie cutter, cut out your gingerbread men and transfer to a parchment lined baking sheet.

Bake for about 10 minutes, or until your cookies have risen and taken form - do not over-bake. Depending on your cookie cutter size and oven, cook times will vary, so just keep a close eye and use your best judgment. I prefer my cookies soft and malleable!

Transfer to a wire rack and cool before decorating.

Combine your icing ingredients in a small bowl and mix well. Transfer to a piping bag with a fine tip and decorate to your liking (I used little pearl sprinkles for buttons and eyeballs to help makeup for my horrendous piping skills).

My favorite gluten-free all purpose flour is found at Trader Joes in the baking section - Bob's Red Mill also makes a fabulous gluten-free all purpose flour as well.
